Ingredients

    2 slices bacon, chopped
    1 onion, chopped
    1 29-oz (large) can pumpkin
    3.5 cups low-sodium chicken broth
    1 cup applesauce (low-sugar preferred)
    2 tsp ground ginger
    1/2 cup light sour cream
    Salt & pepper to taste

    Optional: a sprinkling of pumpkin pie spice is tasty in this!

Tips

This can be made with vegetable broth for those vegetarians out there! The sour cream can be omitted, but adds some fat, protein and a tanginess to the flavor, so I strongly recommend using that if possible.


Directions

Saute 2 slices chopped bacon and 1 chopped onion; drain fat.

Add one 29-ounce can pumpkin, 3 1/2 cups low-sodium chicken broth, 1 cup applesauce, and 2 teaspoons ground ginger. Mix well.

Add salt and pepper to taste; bring to boil. Simmer for at least 10 minutes to let flavors combine.

Add 1/2 cup light sour cream just before serving.

Serving Size: Makes 4 large servings (approximately 1.25-1.5 cup each)
