Introduction

Ingredients

    5 boneless, skinless chicken breast halves
    3 tbs olive oil
    1 medium onion, finely chopped
    1 can reduced sodium pinto beans, rinsed and drained
    1 can reduced sodium garbanzos (chick peas), rinsed and drained
    1 can reduced sodium black beans, rinsed and drained
    1 can Benita's mexican style corn
    2 can diced tomatoes with green chilies, mild
    1 can artichoke hearts, drained and finely chopped
    seasonings to taste
    I used Ella's Artichoke Parmesan Dip Mix, chicken seasoning, garlic and herb seasoning, and a little seasoning salt

Directions

cook chicken how you like; I diced mine up really small while it was still mostly frozen, then cooked it in the skillet over med-hi heat with the olive oil and diced onion. This made a lot of the juice run out, though, thus giving me chicken soup. Transfer to a large kettle and add the remaining ingredients. Heat until simmering.

Serving Size: makes about seven 2-cup servings
