Introduction

Number of Servings: 6

Ingredients

    2 large cans of chicken broth (not small 15.2 oz cans)
    3 eggs
    1 small box of orzo
    Juice of 2 lemons
    White meat of rotisserie chicken or 1.5 cups of cooked chicken breast

Tips

Chicken is optional but makes soup stretch more and is a good source of protein
Use whole grain orzo if you can find it


Directions

Bring broth to a boil
Add orzo and allow to boil for amount of time on the box
In large bowl, beat 3 eggs
Slowly add lemon juice, whipping constantly
Slightly cool broth
Add a cup at a time to lemon/egg mixture, whipping constantly (or will curdle)
Repeat until all soup is added
Return soup to large pot and add chicken
Warm until chicken is heated through

Serving Size: Makes enough for 6 people
