Ingredients

    1 lb. boneless skinless chicken breasts
    1 small can of sliced black olives
    1 small can of diced green chiles
    6 vine-on tomatoes
    3 jalepenos
    1 poblano pepper
    1 red onion
    1 can of black beas (rinsed)
    1 can of chicken broth

Directions

Saute dices poblano, jalapenos, & onion in a tsp of olive oil.

Drop tomatoes in boiling water for a few minutes and then set in ice water to peel off skin.

Combine all ingredients in crockpot. Cook on low for 5-8 hours. Makes 4 servings.

you can shred the chicken and use in a wrap or over rice

    I'm sorry, but 666mg is NOT low sodium if you are on a restricted diet. - 1/17/09
