Number of Servings: 12

Ingredients

*2 /1/2 cup oats (old fashioned kind, not quick cooking)

*1 single serving cup (or 1 cup) of plain low fat greek yogurt

    *2 eggs

*3 tbsp agave nectar ( more or less depending on your banana ripeness)

    *1 1/2 tsp baking powder

    *1/2 tsp baking soda

    *2 bananas ( very ripe)

    *Whey vanilla protein powder

Tips

* This is a basic recipe. You can twist it up by adding raising, coconut flakes, dark chocolate chips ( my favorite!), lemon zest, or even carrots and cinnamon to satisfy the carrot cake craving! ;)

Directions

1. Preheat oven to 400 degrees. Spray tin with non-stick cooking spray or line 12 muffin tins with silicone or foil liners, (or just use a silicone muffin pan).
2. Blend oatmeal in blender until looks like flour. Empty blender and blend bananas with agave, Greek yogurt and protein powder until smooth.
3. With hand mixer beat the eggs in a separate bowl. While beating, pour in banana-yogurt mixture. When mixed, slowly add the flour while still beating until fully mixed.
3. Divide batter among cupcake liners, and bake for 20-25 minutes, or until toothpick comes out clean.
4. Most importantly: Enjoy!!!
