Introduction
This is just the soup part. You can make tortilla strips to go with it by sprinkling corn tortillas (cut into strips) with canola oil and cumin and baking at 375 deg for 12 min or so... Ingredients

2 tbs canola oil
1 tbs cumin
1 tsp oregano
2 tsp minced garlic
1 large onion, diced
2 large green peppers, diced
4 14.5 oz cans rotel tomatoes w/chilis
2 32 oz cartons of chicken broth
1 16 oz package frozen corn
2 lbs cooked chicken breast
Directions
In a soup pot, heat canola oil and add cumin, oregano onion, and green pepper. Cook until softened.
Add tomatoes, and chicken broth and bring to a boil
Reduce heat and add corn and chicken. Simmer for 10 minutes.
Add desired toppings and enjoy!
