Ingredients

1 cup whole wheat flour
1 cup white flour
2 tsp baking powder
1/4 cup brown sugar
1/4 cup white sugar
1 tsp ground ginger
1 tsp ground cinnamon
1 tsp ground cardamon
2 large eggs
1/4 cup melted butter
1 cup buttermilk
1 tsp vanilla extract
1 large carrot, shredded
1/2 cup sweetened coconut
optional:
1/2 cup raisins, soaked in warm water and then drained (not included in caloried count)
1/2 cups walnuts, chopped (not included in calorie count)
Directions
Preheat oven to 350F
In a large bowl, mix both the flours, baking powder, both sugars, and all the spices.
In another bowl, mix all of the wet ingredients (from eggs to vanilla extract)
Add the wet ingredients to the dry ingredients. Mix well. Add the shredded carrots and the coconut. If you wish, add the raisins and the walnuts.
In a 12 muffin baking pan, even distribute the muffin mix (fill each space 2/3 full).
Bake for 25 minutes or until done.
