Ingredients

1 medium head cauliflower
3 medium russet potatoes
1 leek
1.5 cups chicken stock
1.5 cups skim milk
3 slices turkey bacon
.5 cup lite sour cream
.5 cup lite cheddar cheese
Directions
Steam the cauliflower in about an inch of water until tender. Meanwhile, cook 3 medium potatoes in the microwave (prick all over and heat for 5 minutes; turn over and heat for another 3 minutes). Slice turkey bacon and leeks and sautee - if necessary, add a splash of chicken stock to facilitate sauteeing. Drain the cauliflower, break into chunks and return to the pot. Add chicken stock, milk, half of leek and bacon mixture, and potatoes and bring to a boil. Reduce heat to low, and blend with an immersion blender. Fold in sour cream and stir with a spoon. Serve with remaining leek and bacon mixture and cheddar cheese.
