Ingredients
* Miso, 1 cup
* *daikon, 50 gram(s)
* *dashi broth, 1 cup
Directions
Miso soup (more fermented soybean goodness) with sliced and quartered daikon radish, flavored with store-bought Japanese fish stock aka 'dashi' (this could be upgraded if one sources their own stock--time consuming, but inevitably healthier and with less unnecessary ingredients--MSG, preservatives, etc...)
Miso soup: when boiling your chosen vegetable to enhance your miso soup, make sure to always allow the water to cool below boiling when you add in the miso paste. Boiling changes the structure of the miso as it is a fermented, living organism. Apparently, this reduces/negates the healthy benefits of it. Same thing with natto...it doesn't need to be cooked. Keep it refrigerated until ready to use, mix it up, and place it on steamed rice. The rice will warm it just enough.
