Ingredients

    Almond Milk, Unsweetened Original, 24
    Spinach, fresh, 2 cup chopped
    Onion, raw, 1 large chopped
    Thyme, ground, 2 tbsp
    Basil, ground 2 tbsp
    Mushrooms, fresh, 3 cups, chopped
    Whole Grain Quinoa, 1.5 cup dry
    Ground turkey, 93% lean, 16 oz
    egg whites, 18 large or 2.5 cups
    Egg, 6 large
    Garlic, 4 clove
    Salt, 1 tsp
    Pepper, black, 1 tbsp
    Additional spices maybe added for flavor...I love adding hot sauces and red pepper flakes

Directions


rinse and layer quinoa on bottom of lightly oiled 9x16 baking pan. Brown turkey, add spices for taste. layer on top of quinoa. mix eggs, veggies, and spices. put on top. Cover with foil,Bake at 350 for 40-45 min, until cooked through.
