Ingredients

9 slices of whole wheat bread, cubed and dried in advance (or bake at 350 to lightly toast)
3 links turkey italian sausage, casings removed
3 medium stalks celery, chopped
1 cup chopped onions
3/4 cup cored/chopped apples (leave skins on)
1 Tbsp dried sage
2 Tbsp fresh parsley, chopped
1 tsp dried thyme
2 1/4 cups low sodium, fat free chicken broth
1/3 cup eggbeaters (or 3 egg whites)
dash salt
couple dashes pepper
Tips
If you like spicy, use the hot turkey italian sausage
Directions
Saute sausage, breaking up as it cooks. Drain in a colander to remove any fat and return to skillet. Stir in celery, onion, and apple. Saute till tender.
In large bowl, stir bread cubes, sausage mix, sage, parsley and thyme. Pour broth and eggbeaters over mix and toss to coat. Season with salt and pepper.
Stuff into turkey and cook with bird if desired, or place in 9x9 casserole disk and bake until browned on top, about 45 minutes.
