Ingredients

    4 mashed, ripe bananas
    2 tbsp dark muscovado sugar
    1 egg
    1.25 cups flour
    1.25 tsp baking powder
    0.5 tsp bicarbonate of soda
    1 tsp ground ginger
    1 tsp ground cinnamon
    Dash of salt

Tips

It is quite a wet and chewy bake as there is no additional fat added to the mix. Add nuts, fruit and/or choc chips to make it a little more exciting. Walnuts are perfect. Great for breakfast or an energy boosting afternoon snack.


Directions

1. Preheat oven to 175C and grease a loaf tin.

2. Mix the mashed banana, sugar and egg together with a fork or whisk. Electric mixer not necessary.

3. Sift in the rest of the ingredients and mix until everything is just incorporated. Lumpy is fine.

4. Bake for 50 minutes. Allow to cool completely before slicing.

Serving Size: Makes six generous slices
