Ingredients

    For the salad
    1/2 yam cooked the night before (no salt, 425 for 40 min, store in tinfoil in the fridge until ready for use)
    1.5 cup of spinach
    About 1 oz of feta
    about 10 pecans, whole or halved

    For the dressing, mix
    2 TBSP EVOO
    1 TBSP Brown Mustard
    1 TBSP Honey
    1 Tsp White Wine vinegar

Tips

If you cook a whole yam, it should be good for 4 days in the fride, or you can make two salads, one for you and one for a friend.
