Ingredients

    1 chicken breast, bone and skin removed (about 26 oz)
    1/3 cup spinach, fresh, chopped
    19 grams (1 Tbsp) sun dried tomatoes, chopped fine
    2 wedges of Laughing Cow cream cheese
    3 Tbsp ground flax seed
    10 grams shredded parmesan (split)
    1 4-second spray olive oil
    salt & pepper to taste (I used some garlic salt)

Directions

Preheat oven to 350 degrees.

Make a pocket in each breast half then salt & pepper to taste.

Mix spinach, sun dried tomatoes, 5 grams of parmesan, & cream cheese. Divide mixture in half & stuff the chicken breasts.

Mix the rest of the parmesan cheese & the ground flax seed. Coat the chicken breasts with the mixture & firmly press into the meat. Place breasts on a cookie sheet lined with parchment paper. Spray each breast with a little olive oil & bake for 30 minutes until juices run clear.

Serving Size: 4 (about 6.5 oz each)
