Ingredients

3 bananas mashed (1.5 c)
1/2 c skim milk
8 tbsp melted smart balance light spread
3/4 c sugar
2 c 100% whole wheat flour
2 tbsp flaxseed ground
1 tsp baking soda
1 tsp salt optional
(also optional exchange 1c whole wheat flour for 1c unbleached flour for lighter texture)
Tips
exchange 8 tbsp of real butter if desired. Omit sugar for less sweetened muffins. Do not over bake or they become rubbery. Pull from oven when just lightly browned on top and stick comes out of middle muffin dry.
Directions
mix sugar, milk, eggs, and melted spread. In seperate bowl mix flour, baking soda, salt, and ground flax. Slowly stir dry mix into wet mix 1/2 c at a time until thick. Use a tbsp of skim milk at a time if too thick or dry.
