Introduction

Yummy goodness that I always had in restaurants, but didn't realize I could make at home. Adapted a recipe from another site to calculate the calories. Ingredients

    6 onions, sliced in strips
    2 Tbsp Butter unsalted
    6 Garlic cloves
    8 cups Beef stock, home-prepared from beef base
    1 tsp Thyme
    1/2 cup White Wine
    4 slices french Bread, toasted
    4 oz. part skim Mozzarella Cheese

Tips

This can be slimmed down by varying your ingredients to low sodium, low fat, etc. but trust me, it won't taste as good. :) This is an entire meal in itself!


Directions

Melt butter in dutch oven, add garlic and onions and saute until onions are translucent. Add beef stock and wine, thyme (and any other seasonings you like such as salt, pepper, bay leaves, etc) and let simmer for 10 minutes. In four oven safe bowls, divide equally the onion soup, top with the toasted french bread, followed by 1 oz. of the cheese on each. Broil until cheese is melted, or let it bake until it turns the cheese slightly brown (my preference!).

Super satisfying, fills you up, and tastes like you were SUPER naughty. :)
