This is really more a compilation of recipes, since you can make the components ahead of time (it's actually best to make the cake and filling a day ahead). The "ball" mix can be frozen up to 6 months either formed or not - and they taste like apple fritter doughnut holes when rolled in cinnamon sugar! Ingredients

1 Vegan Vanilla Loaf Cake, ideally cubed and left out overnight (http://recipes.sparkpeople.com/recipe-detail.asp?recipe=2288229&ff=1)
1 batch (3/4 cup) Maple Apple Cake - Ball Filling, cooled (http://recipes.sparkpeople.com/recipe-detail.asp?recipe=2281941&ff=1)
1 tbsp cinnamon
1 tbsp powdered sugar
1 tbsp raw sugar
Directions
Mash or tear the cake cubes with your hands or a few forks until crumbly.
Add the Maple Apple Cake - Ball Filling, mixing with a fork to form a dough (add a dash of milk or apple juice if necessary, I had no problem).
Chill 30 minutes.
Mix the cinnamon and sugars.
Scoop tablespoon sized balls and roll in the spiced sugar, tapping off excess.
Store in an airtight container in the fridge up to 5 days, or freeze up to 4 months.
Serving Size: Makes about 30 "doughnut hole" sized balls
