Introduction

Ingredients

    1c. cooked pinto beans
    1/2 c. diced onion
    1/4 c. diced celery
    1/2 c. diced carrots
    1/4 c. diced sweet red pepper
    1/2 c. jalapeno, seeded and chopped fine
    1T. minced garlic
    .5 c. low sodium chicken broth
    .5 T ground cumin
    .25 t. ground cayanne
    2 t. coconut oil
    1 c brown rice (cooked)

Tips

Garnish with chopped fresh cilantro, or add a dollop of plain yogurt. Serve with tortilla chips.


Directions

Heat skillet or small dutch oven to medium, heat coconut oil then add onion, celery, carrots, and red pepper saute untill onion is tender, add garlic, jalapeno and spices stir together.

Add beans, rice and chicken broth, stir, cover, reduce heat to low and simmer for 20 min.

Serving Size: makes 2 1.5-cup servings
