Number of Servings: 6

Ingredients

    1 c fiber one cereal (crushed)
    1 egg beater
    1/2 c applesauce, unsweeted
    12 oz nonfat vanilla yogurt
    1 1/2c wheat four
    8 tsp splenda brown sugar
    1 1/4 tsp baking soda
    1/2 tsp salt
    1/4c flaxseed, ground
    1c blueberries, fresh

Directions

1. Heat oven to 400 degrees F
2. Grease bottom of (6) oversized muffin tins or (12) regular size muffins tins or use baking cups
3. Crush cereal
4. Sitr egg beaters, applesauce, and yogurt.
5. Stir in cereal and dry ingredients until moistened.
6. Fold in blueberries.
7. Spoon batter into cups, approximately 2/3 full
8. Bake 18-22 minutes or until brown, check muffins with toothpick and ensure the muffin is done.

    This came out great! I think I may have taken a little creative license though. I added one real egg and then used low fat yogurt not non-fat yogurt and also regular brown sugar (5 table spoons is the conversion). I like to use real things whenever possible. I'm not a fan of artificial sweeteners :) - 7/18/09

    I tried this recipe and thought it was darn yummy. The only problem is the ingredients do not specify how much egg beaters to use, so I had to guess. I just kept adding egg beaters to the other ingredients until the mixture became moist. It says "1 egg beater." Is that 1 cup or 1/2 cup? - 1/22/21
