Ingredients

9" Pie crust
1 cup all-purpose flour
1/2 tsp salt
1/4 tsp seasoning (cinnamon, depending on filling)
2 tbsp sugar
1/3 cup plus 1 tbsp butter
2 tbsp cold water
1 tbsp vodka
Filling: (can prepare ahead or use leftovers)
1/2 cup sauteed onions (lightly salted and peppered during sauteing)
1/2 cup peppers, broccoli, mushrooms, etc. (lightly salted and peppered during sauteing)
1/2 - 3/4 shredded cheese (cheddar mix)
Custard mix:
4 jumbo eggs
3/4 cup light cream
3/4 cup heavy cream
1/4 tsp white pepper
1/4 tsp nutmeg
Dash salt
Tips
Filling could be any mixture you like: Meats, fish or other veggies such as spinach, potatoes, peppers, fennel, asparagus, etc. Just use your imagination!
Directions
-Place pie crust in pie plate and prick with fork. Chill for at least 30 minutes (usually I do this the night before)
-Blind bake crust until it is a light golden brown (bake in a 375 degree oven with pie weights)
-Place vegetables/meat in bottom and sprinkle cheese over filling mixture.
-Bake in 375 degree oven for about 45 minutes. Top will be slightly brown and should be almost firm to touch. Depending on your oven it could take another 10-15 minutes.
