Ingredients

    4 T. unsweetened cocoa powder
    2 Tablespoons ground flax seeds
    4 T. coconut flour
    1 tablespoon brown sugar
    .5 tsp. almond extract
    2 small zucchini (mashed)
    1/2 c. sunflower seed butter
    1 teaspoon coconut palm sugar

Directions

preheat oven to 350
peal and mash zucchini finely and squeeze out some of the liquid

Mix 4 Tablespoons unsweetened cocoa powder with 2 Tablespoons ground flax seeds, 4 Tablespoons coconut flour, and 1 Tablespoon Brown Sugar (or coconut palm sugar if you have it, but that changes the nutrient calculation obviously)

Stir in ground zuchini, 1/2 cup sunflower seed butter, and .5 teaspoon of almond extract (or vanilla but I'm allergic) roll into 12 equal balls then press into cookie shapes (like making hamburgers)

Dust cookies with coconut palm sugar

Cook at 350 for 10 to 15 minutes until finished

Serving Size: makes 12 cookies
