Ingredients

1 pie pumpkin, 2 - 2.5 pound
*Jimmy Dean All Natural Regular Pork Sausage, 16 oz (remove)
Ricotta Cheese, whole milk, 1 cup (remove)
*Cheese - Gouda, 5 oz (remove)
*Fuji Apple - 8 OZ - 1 Large Apple, 3 serving (remove)
Onions, raw, 1 cup, chopped (remove)
Raisins, .25 cup, packed (remove)
Seasonings: Savory and Cinnamon to taste.
Tips
There will be extra stuffing; bake in covered casserole dish separately for about 45-60 minutes.
Directions
Cut out top of pumpkin like carving a jack-o-lantern.
Remove seeds and strings (roast seeds separately in oil and spices for a treat).
Preheat oven to 375 degrees.
Saute sausage with onion until no pink remains and onion is softened. Combine sausage mixture with chopped apple, chopped gouda, raisins, and ricotta. Add seasonings, mix thoroughly. Stuff pumpkin tightly with sausage mixture.
If using cider, pour cider slowly over stuffing to fill. Replace stem cap.
Bake 2 hours or more until pumpkin is soft/ tender and filling is set.
Serving Size: Makes about 6 servings of filling and 4 pumpkin quarters.
