Introduction

Ingredients

    10 Chicken Breast Tenderloins, baked, grilled, or broiled. Chopped and cooled
    1 cup (dry) Trader Joe's organic red quinoa - cooked per package directions and cooled
    1 cup Red seedless grapes
    3/4 c. diced Fennel. I use parts of the whole thing - leaves, bulb, finely chopped stem
    1/2 cup Leeks - sliced fine (white and very light green part only)
    1/4 cup sliced or slivered Almonds
    1 8 oz. cup 0% Plain Greek Yogurt
    1 T Balsamic Vinegar
    Salt and pepper to taste

Directions

Mix all together and chill at least a couple hours

Serving Size: 5-6 servings
