Ingredients

    1-2 Tbl Oil (Olive or Veg)
    1 large Onion, diced or grated
    1 lb Ground Turkey Breast
    2 large Zucchini, diced or grated
    1-2 large Carrot, diced or grated
    2 cans of low sodium beans (black and/or pinto), drained
    16 oz. Frozen Sweet Corn
    1 large can of Crushed Tomatoes
    1 large can Petite Cut Diced Tomatoes
    6 Tbl Chili powder
    1/2 tsp Ground Cumin
    1/2 tsp Cayenne Pepper (optional)
    2 tsp Garlic powder
    1/2 tsp Dried Oregano,
    2 tsp Salt (+/- to taste, but season as you go)
    1/2 tsp Ground Black Pepper (+/-)
    3 Tbl Corn masa

Tips

Do not add extra liquid, even if it looks like it needs it, until it is almost done. If you end up needing more liquid add chicken stock a little at a time until desired consistency.

NOTE: sodium is actually lower than nutritional information. Low sodium beans were not an option for an ingredient.


Directions

- Heat Oil and add Onions and 1/4 tsp salt.
- Saute onions until they just start to soften
- Add ground turkey, 1/4 tsp salt and a bit of ground black pepper. Cook,breaking it up as it cooks, until done.
- If using a Crock Pot: Put cooked turkey mix and all other ingredients in slow cooker, stir, and put on high for 6-8 hours.

- If cooking on the stove cook the onions and turkey in a big pot. Once they have cooked add balance of ingredients and bring to a boil, stirring occasionally. Turn down to simmer and cook for __________ minutes (until done).
