Ingredients

    Olive Oil, 3 tbsp (remove)
    Carrots, raw, 1 cup, chopped (remove)
    Celery, raw, 1 cup, diced (remove)
    Onions, raw, 1 cup, sliced (remove)
    Split Peas, 1 cup (remove)
    Barley, pearled, raw, .5 cup (remove)
    Potatoes, diced, 1.5
    water, 6 cups
    bay leaf, 2 pcs
    Salt and pepper to taste

Directions

Soak split peas in water overnight. Rinse and Drain. Heat oil in a 3 quart soup pot. Add onions, carrots and celery and cook over medium heat until softened and lightly caramelized. Add split peas, barley, potatoes, bay leaf
and water. Bring to a boil then lower heat and simmer for about 2 hours or until the peas have started to disintegrate and the soup is rather thick. Salt and pepper to taste.
