Ingredients

    2 cups quinoa, cooked
    1 can black beans, drained
    1/4 cup chopped purple onion
    1/2 cup chopped yellow pepper (or any other color)
    1 jalapeno (diced)
    1/4 cup cilantro

    Dressing
    4 TBS lime juice
    1 clove garlic, minced
    1 tsp salt
    1/2 tsp cumin
    1/2 tsp black pepper
    chopped cilantro

Tips

Great with corn, avocado or other veggies added!


Directions

Cook quinoa and cool. Add remainder of ingredients. Toss with dressing. Let refrigerate a bit before eating.
