    *3/4 cup olive oil
    *1/3 large yellow onion, chopped finely
    *3 tsp minced garlic
    *3/4 cup whole wheat flour
    *2 tbsp nutritional yeast
    *4 tbsp Reduced sodium soy sauce
    *2 cups vegetable broth (I use 2 cups water with 1 cube of Rapunzel Vegan Vegetable Bouillon w/ Sea Salt & Herbs)
    *1 tsp ground sage
    *1/2 tsp sea salt
    *1/2 tsp fresh cracked black pepper
    *Water as needed to reach your preferred consistency


You can keep the gravy covered and simmering until it is ready to serve, or refrigerate it and serve it later.


1) Heat oil over medium heat in a medium-sized saucepan. Do not allow the olive oil to smoke.
2) Saute the onion and garlic until it is translucent.
3) Add the nutritional yeast and soy sauce. Stir thoroughly.
4) Add the flour in small quantities, stirring thoroughly each time until the mixture forms a thick pancake batter-like consistency.
5) Pour in the vegetable broth, again stirring as you pour to keep the mixture blending together.
6) Add water until the gravy reaches your desired consistency.
7) Season the gravy with sage, sea salt, and black pepper. Adjust the seasonings to your taste.
8) Bring the gravy to a boil.
9) Reduce the heat and simmer the gravy, stirring regularly until all the final lumps and irregularities are gone.
10) Enjoy!
