Introduction

I made these one morning when my boyfriend wanted waffles and I had no eggs. The flax meal replaces the eggs, and the applesauce replaces the oil that you would have in a traditional waffle recipe. I even use agave or stevia for the sugar to make it even healthier! They are a little chewier than your standard recipe but they are SO yummy with some homemade jelly on them! Ingredients

    Flour, 2 cup

    Flax Seed Meal, 2 tbsp (mix with 6 tbsp water and let sit for 2 min)

    Milk, 1 3/4 cup

    Applesauce, unsweetened, 1/2 cup

    Baking Powder, 4 tsp

    Granulated Sugar, 3 tsp

Directions

Preheat waffle iron to medium heat.

Mix dry and wet ingredients in a large bowl. Beat until smooth.

Spoon into waffle iron, close lid and let cook for about 5 min. If they stick, spray the iron with oil before filling.

Remove from iron and top with fruit, nuts, butter, or syrup!

Serving Size: One batch makes about 5 waffles on a traditional waffle maker
