Introduction

This is an accidental adaptation for the no-butter sugar cookie recipe found on the blog: A Foodie Loves Company. I say accidental because her recipe calls for 2/3 cup canola oil however I substituted vegetable oil and accidentally used 3/4 cups instead of 2/3 cups. They still turned out quite nicely. Number of Servings: 1

Ingredients

    2 eggs
    3/4 cup vegetable oil
    2 tsp vanilla
    3/4 c sugar
    2 cups flour
    2 tsp baking powder
    1/2 tsp salt

    Optional small saucer of sugar.

Directions

Heat oven to 400 (F). Mix all dry ingredients then beat together wet ingredients and fold together. Drop cookies onto a cookie sheet lined with parchment paper, then wet the bottom of a glass in water, press into bowl of sugar and flatten cookies. Bake about 8 minutes. (timing may vary depending on your oven).

Serving Size: makes 21-24 large cookies

    I even lacked vegetable oil at the time of my craving. So, I sub out with a blend of walnut & grapeseed oils. Grapeseed for its close taste to butter & Walnut for a bit of nutty flavor. I cut this recipe on half, only made three cookies to satisfy my craving, and they are wonderful. YUM! - 2/6/15

    I tried making the cookies but there was WAY too much oil... cookies were drowning in it. After I cooked them they were surrounded by the oil and didn’t really taste that good - 5/13/20
