Introduction

Received some persimmons in my produce box and wasn't quite sure what to do with them. I "winged" this recipe with items I had in the pantry and fridge, so I'm sure this can be tweaked and made better. Ingredients

    1 Persimmon, diced
    1 Jalapeno pepper, diced
    1/4 red onion, diced
    3 cloves garlic, diced
    2 tbsp olive oil, more or less to taste and consistency
    1/4 oz lime juice, more or less to taste and consistency
    pinch of salt
    black pepper to taste
    cilantro to taste

Directions

Dice the persimmon, jalapeno, onion, and garlic. Place in a glass bowl and add olive oil, lime juice, salt, pepper and cilantro to taste. Cover and let stand in the fridge for at least 1 hour, but the longer the better the flavor!

Serving Size: Serving size about 1/4 cup
