Introduction

This makes a great meal any time. Add a salad for a fabulous dinner or some fruit for a filling breakfast. I don't add salt to this because I find Feta adds plenty. This makes a great meal any time. Ingredients

    1 tsp Olive Oil
    1/4 cup Onion (diced)
    2 Scallions (thinly sliced)
    1 clove Garlic (minced)
    1 1/2 cups Fresh Spinach
    1 large Egg White
    1 Tbsp Fat Free Greek Yogurt
    2 Tbsp Feta Cheese (crumbled, divided)
    Black Pepper to taste
    Pinch each of Thyme, Oregano and Cayenne Pepper
    1 Whole Wheat Tortilla (8")

Tips

You can prepare everything up to step 4 ahead of time, refrigerate and then pull out to make a quick breakfast or meal.


Directions

1) In a small non-stick pan, heat the oil. Add the onion and scallions and cook until soft, 2 -3 minutes. Stir in the garlic, cook one more minute. Sprinkle with pepper and spices.

2) Mix in the spinach and cook until wilted, 2 minutes. Remove to a bowl and cool slightly. Use a wooden spoon to press out excess liquid if spinach seems watery and drain.

3) In another bowl, whisk together the egg white, yogurt and 1 Tbsp of feta. Add to cooled spinach and mix until combined.

4) Wipe out pan and spray with non-stick spray. Over low heat, put the tortilla in the pan and sprinkle the remaining feta over one side of the tortilla and get to soften slightly. Turn the heat to medium and pour the egg-spinach mixture over the same half of the tortilla, fold the other half over and cook on one side until the egg begins to firm up. Flip and cook other side. Cut into wedges and serve immediately.

    Incredible!
    Tastey lunch item. The combination of spices/herbs is perfect. Easy enough to prepare. I did use the whole egg instead of just the white. - 12/6/12
