Ingredients

    1 box cake mix (yellow or spice works nicely)
    1 15-oz. can pumpkin

Tips

You can also add additional spices (cinammon, pumpkin pie spice, etc.) and nuts, flax, chia seeds, coconut, etc. Make sure to include these items in the calorie count.


Directions

Using an electric mixer, blend the box cake mix and pumpkin well. Evenly distribute the mix into 18 muffin liners.

Bake in a 350 degree oven for 20-25 minutes.
