Introduction

Crockpot veggie curry! Crockpot veggie curry!
Number of Servings: 8

Ingredients

    1 Can Coconut Milk (Tosca)
    1 tbsn garam masala
    1 tbsn curry
    1 tbsn cinnamon

    250 gr Cauliflower - raw, diced
    1 C Red Lentils - dry

    750 gr Squash - diced
    1 Red Bell Pepper - large, diced


Tips

Serving size is 250 gr... as a substantial side dish.
I prep everything the night before and let it sit on the counter for the night.
You can make it lighter switching for Light Coconut Milk.


Directions

Pour the lentil in the bottom of the crockpot. Add the cauliflower.
Mix the coconut milk and the spices together. Add 2/3 of the milk to the colliflower and lentils.
Cut the squash and red pepper. Cover the lentils. Add the remaining of the milk.
Cover and cook in the crockpot at LOW for 6 hours.

    First, there is no salt in it and it really needs a little. Second, my crockpot can only be set by hours. I mistakenly set it for 6 hours, not thinking that it would cook at high. It turned to a sludgy mess. If you have a crockpot that it by hours, probably set it at 10 hours to cook it on low. - 12/11/16
