Introduction

Add rice cauliflower to pump up the volume in beans and rice. Add rice cauliflower to pump up the volume in beans and rice.

Ingredients

    6 cups of cauliflower rice - steamed
    3 cups of brown rice cooked
    3.5 cups of black beans from can rinsed and drained
    1/4 cup of chopped purple onion
    1/4 cup of chopped cilantro
    1 tbsp of cumin
    1/2 tbsp of sweet ground chipolte spice (optional)
    Salt
    Pepper
    1 lime squeezed over top

Tips

Could serve with chicken for extra protein or add in some fresh sliced avocado for healthy fat.


Directions

Grate cauliflower until rice consistency in food processor or Vitamix. I use a Vitamix. Put a few heads in at a time, keep in low, blend until like rice, put in large bowl and repeat until you go through two heads.

Steam the "rice" in the microwave while your brown rice cook on stove. I just cover a big bowl with wax paper and add about 1/4 cup of water. Cook 3 min., stir, cook 2 more min.

After brown rice, cauliflower rice is done, mix all ingredients in large bowl and portion our for a week of lunches!
