Number of Servings: 6

Ingredients

    4 or 5 sweet potatoes, cut into chunks
    4 boneless, skinless chicken thighs cut into chunks
    1 medium onion, sliced
    3 cloves garlic
    1/2 package of kale, chopped
    1/2 tsp dried thyme or 1 tbsp fresh
    1 tsp dried basil
    1/2 tsp dried ginger
    2 or 3 bay leaves
    salt & pepper
    1 can diced tomatoes
    1 can tomato sauce
    8 (or so) cups chicken or turkey broth

Directions

Place chicken, sweet potatoes, onion, and garlic in crockpot. Add broth until about 1/2 way of the pot, then add tomato sauce, diced tomatoes, and spices and stir until blended. Turn the crockpot to desired setting (4 hours on high, 6 hours on low). When the chicken is finished cooking add the kale to the pot and stir. When the kale has wilted, the stew is ready to eat!
