Ingredients

Dry:
1c quick cooking oats
1. Almond meal
1/4tsp salt
1/4tsp baking soda
1/4c brown sugar (can use sugar substitute...i didn't have any so I used brown sugar in mine)
1 tsp cinnamon
Wet:
1/3c fresh pumpkin cooked and mashed
1 tlb Almond Butter (organic)
3 egg whites whipped until peaks form
1 tlbs honey
Tips
Try adding in nuts or fruit. These are not overly sweet so if you prefer a sweeter cookie then you will need to add more sugar or dried fruit. Combine cookies to make them larger but this will effect cooking time.
Directions
mix all the dry together. If you are using brown sugar make sure to mix by hand so that you can break up the clumps.
mix all the wet ingredients in a separate bowl.
In another bowl mix the egg whites until a peak forms.
Combine the wet ingredients (minus the egg whites) into the dry ingredients and mix well. You can taste the recipe here to see if it is sweet enough for you.)
Then add the mix to the egg whites and mix until well blended.
Place cookies by the tablespoon on a parchment lined cookie sheet and bake for 20 mins at 350.
Serving Size: makes 22 cookies using a 1 tbls serving
