Introduction

Came up with this on the fly with some leftover veggies. Came up with this on the fly with some leftover veggies.
Number of Servings: 5

Ingredients

    4 bell peppers, mixed colors
    2 c chopped red onion
    4 chopped tomatoes
    1 can of pumpkin
    2 tbsp minced garlic
    2 jalepeno peppers
    1tbsp tomato paste

    vegetable broth

    cumin
    cayenne,
    chipotle chile
    salt

Tips

could also be made with ground turkey or chicken sausage.


Directions

saute vegetables and garlic in olive oil until tender
add herbs, sauteeing until fragrant.

add tomato paste and stir until dissolve
add beans, broth and pumpkin and bring to a boil
Let simmer 20 minutes
