Introduction

Enhanced Oopsie Roll recipe made with peanut butter for a dairy free version ( instead of cream cheese). I would say it is way better than the original Oopsie Roll because it has more structure to it and is very bread- like. It is best served of course with some jelly or your other favorite toppings. Number of Servings: 4

Ingredients

    -4 eggs ( separated into two bowls)
    - 2 heaping tbsp all natural peanut butter
    - 1/2 tsp vinegar or cream of tartar

Directions

- Add vinegar or cream of tartar to egg whites and whip until very stiff ( about 3 - 5 min)
- in another bowl, mix peanut butter and egg yolks.
- if your yolk and peanut butter mixture looks very thick, add about 2-3 tablespoons of beaten egg whites and mix. This should thin out the yolk mixture.
- then add the yolk mixture to the egg whites and fold in gently until just mix.
- do not over mix or you will break down the egg whites and be left with liquid.
- spoon the mixture onto a cookie baking sheet and form 4 rounds.
- bake for 30 minutes at 300 F.


Serving Size: Makes 4 "hamburger bun sized" servings

    These are awesome! I made them with the last of the peanut butter from the jar so my peanut butter/yolk mixture was super sticky and hard to blend into the meringue and they still came out great! I will have to try these with other nut and seed butters. - 8/27/15
