Ingredients

4 cups shredded carrots (3 large)
1 apple, seeded and chopped in small pieces (can use Red Delicious, Gala, Golden Delicious, your favorite crisp apple)
1 cup drained pineapple tidbits (or slices cut into small pieces)
1/2 cup chopped walnuts
2 Tbsp. coconut butter/cream or 2 Tbsp. sour cream
Tips
I am lactose-intolerant. I used to make this with sour cream or vanilla yogurt, but now I substitute coconut cream.
Directions
Mix shredded carrots, finely chopped apple, pineapple and walnut. Mix well. Add cream and stir.
