Introduction

This is a great grab-n-go breakfast. I make it in a 8 oz mason jar (and make a few in advance). You can use any storage container, I just happen to have a lot of jars. This is a great grab-n-go breakfast. I make it in a 8 oz mason jar (and make a few in advance). You can use any storage container, I just happen to have a lot of jars.

Ingredients

    1/4 Cups of Oats (uncooked)
    1/3 Cup of Coconut Milk
    1/4 Cup of Greek Yogurt Plain
    2 tsp of Honey (you can also use a packet of Stevia)
    2 tsp of flaxseed meal or chia seed
    1/4 cup of Pineapple (I used crushed)

    Put all contents except pineapple in mason jar. Put lid on and shake vigorously. Reopen and stir in pineapple. Allow to sit in fridge overnight. This will keep for 3-4 days (if you can keep it in the fridge :) ).
