Ingredients

    1/2 c. white granulated sugar
    2 tsp. baking powder
    3 tsp. vanilla extract
    2 eggs, large
    3.5 c. quick cooking oats
    1.5 c. skim milk
    2 c. fresh blueberries
    1 tsp. salt
    1/4 stick unsalted butter, melted

Tips

Use fresh blueberries or frozen. Maybe even try a berry mix.


Directions

Beat eggs in large mixing bowl. Add all ingredients except oats and mix thoroughly. Add in oats and mix. Pour into 8x8 glass baking dish sprayed with PAM. Cook at 350 degrees for 33 minutes
