Introduction
Every Christmas, we drag out my mother's old, food-stained Better Homes & Gardens cookbook for its recipe for Rolled Ginger Bread cookies. This year, in attempt to do better for my family and I, I changed things up a little bit. They smell (and taste) AMAZING. Ingredients

1 cup vegetable shortening
3/4 cup sugar*
1 egg
1 cup molasses
2 tbsp balsamic vinegar*
4 1/2 cup all-purpose flour*
3/4 cup ground flaxseed meal
1 1/2 tsp baking soda
1/2 tsp salt
2-3 teaspoons ground ginger
2 tsp ground cinnamon*
2 tsp ground allspice*

These probably are higher calorie cookie, but they also have more fiber, omega-3 fatty acids, and other nutrients than a generic rolled ginger cookie.
Directions
Place rack on top rung. Preheat oven to 375 degrees. "Cream sugar and shortening. Beat in egg, molasses, and vinegar. Sift together dry ingredients; blend in. Chill dough for 3 hours.
Roll dough 1/8" thick on lightly floured surface OR between Seran-type wrap. Cut in shapes."(Serving size refers to small 2"X3" shape cookies) "Place 1" apart on lightly greased baking sheets. Bake at 375 for 5-6 minutes. Cool slightly(about 5 minutes) on sheet; remove cookies from sheet to cooling rack to completely cool." Frosting not accounted for in calorie and nutrition information!
