Ingredients

    Peppers, sweet, red, fresh, 2 medium (approx 2-3/4" long, 2-1/2", diced
    Yellow Peppers (bell peppers), 1 pepper, large (3-3/4" long, 3" dia), diced
    Green Peppers (bell peppers), 1 pepper, diced
    Onions, raw, 1 large, diced
    Stewed Tomatoes, 8 cup (2 quarts)
    Yellow Sweet Corn, Frozen, 2 cup kernels
    Avocados, California (Haas), 2 fruit without skin and seeds, diced
    Cilantro, raw, 5 tbsp, as garnish
    Garlic, 2 clove, minced
    *Cumin seed, 3 tbsp, ground
    Vegetable Broth, 4 cup
    Jalapeno Peppers, 1 pepper, diced
    Tortilla Chips, 8 oz, crushed
    Cheddar Cheese, 1 cup, shredded

Directions

Mix all ingredients except avocado, cilantro, cheese and tortilla chips. Bring to a boil and allow to simmer until the veggies are tender. Serve over 1oz crushed tortilla chips. Top with shredded cheese, cilantro, and avocado.
