Ingredients

1/4 cup butter, softened
1/2 cup sugar
2 large eggs
1 cup white all purpose flour
1 cup whole wheat all purpose flour
1/2 cup Quaker oats
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup milk
1/4 tsp white vinegar (added to make buttermilk like)'
4 Bananas, fresh, overripe- smashed
1/2 cup nuts (pecans used for the nutritional value of this recipe)
Tips
Bread is moist but a bit more dense. If on hand, I sometimes add a small single serving size of applesauce.
Directions
Cream butter, sugar, eggs. In sep bowl, mix dry ingredients (white flour, wheat flour, oats, baking powder, baking soda, and salt). Add dry ingredients, milk and vinegar and mix well. Add nuts (optional). Pour into 21 muffin cups. (serving size used for this recipe- but would also make a great loaf)

So sorry! New to posting recipes, and I didn't realize that although I listed it as an ingredient for nutritional value, I didn't list it in the other ingredient window! I fixed it. Tip: If only have 2 bananas, add 1-2 small containers of applesauce- my girls love it with the berry kind.
