Ingredients

    *Whole Wheat Flour, 0.25 cup
    *Flour, white, .75 cup
    Sweet potato or yam, one- 5" long, peeled
    Applesauce, unsweetened, 2 Tbsp.
    Butter, salted, 2 tbsp, softened
    Apples, fresh, 2 medium (2-3/4" dia), peeled
    Granulated Sugar, .5 cup
    Egg, fresh, 1 large
    Salt, 1/2 tsp
    Baking soda, 1 tsp
    vanilla, 1 tsp
    cinnamon, 1/2 tsp
    nutmeg, 1/2 tsp

Directions

Spray 9-inch square pan with cooking spray. Preheat oven to 350.

In a bowl, cream together butter and sugar. Add egg, vanilla, and applesauce.

(I use a food processor to mix and chop the rest)

In food processor, quarter the apples and chop. Add to moist mixture in bowl. Chop the sweet potato or yam the same way and add to the moist ingredients.

In food processor with a cookie-dough paddle (or by hand), add flour, salt, baking soda, cinnamon & nutmeg. Pour in moist ingredients and process until all mixed together.

Spread in prepared pan and bake at 350 for 35-40 minutes.

Serving Size: Makes 9 servings.
