Ingredients

4 Boneless Pork Chops
1 C Trader Joe's 100% Pomegranate Juice
1/4 C Red Wine Vinegar
1 Tbl Extra Virgin Olive Oil
1 Tbl Minced Garlic
2 Tbl Fresh Thyme
1/2 tsp Ground Black Pepper
1 C Brown Rice
2 C Broccoli (chopped)
2 C Carrots (sliced)
Tips
You can add 1/4 or 1/2 tsp with red pepper if you like it spicy. There is quite a bit of sugar in the recipe because of the juice, so this recipe is not recommended for diabetics.
Directions
Cut the fat from the pork chops.
Boil the pomegranate juice over high heat until it reduces to about 1/3 C. Let pomegranate juice cool. Add vinegar, olive oil, garlic, thyme, and black pepper to pomegranate juice and mix thoroughly. Pour marinade into a Ziplock baggie or Tupperware container. Place cleaned pork chops into marinade container and seal. Place marinating pork chops in the refrigerator and let marinate for 24 hours.
When finished marinating, grill pork chops, steam rice, and steam veggies.
To serve: grab four plates and fill 1/2 of each plate with the steamed veggies. 1/4 of each plate with rice, and 1/4 of each plate with the pork chop.
