This is a delicious warm soup for a wintry day. It is completely vegan and gluten free, yet feels creamy. One cup is low calorie and packed with nutrients! Ingredients

    In a large pot, combine:
    2 heads of Broccoli, broken up
    1 large white onion. quartered
    2 cups chopped green beans, tips removed
    1 tomato, quartered
    1 yellow crooked neck summer squash, quartered
    2 cubes Rapunzel Veggie Bouillon (no salt added)
    1 tblsp light chili powder
    1 tsp ground cumin
    1 tsp onion powder
    1 tsp garlic powder
    1 tsp tumeric
    2 cups water
    Once cooked, blend 2/3 of the mixture with :
    1 block of extra firm organic non-GMO tofu
    6 tblsp of Kal Nutritional Yeast Flakes
    Pour into a large pot.
    Then blend the rest of the veggies with:
    3 tblsp of the nutritional yeast
    3 tbsp of low sodium gluten-free Tamari
    6 tblsp shelled Hemp seed.




Tips

This recipe is low sodium if you use low sodium ingredients. I use no sodium veggie bouillon and low sodium gluten free tamari. Each cup has only 125 calories but is loaded with B vitamins, protein and potassium! Very creamy! My kind of comfort food!


Directions

Steam the veggies, water and spices together until the veggie are soft. Blend 2/3 of the mixture with a block of tofu, and 6 tblsp of the yeast until creamy. Set aside. Then blend the rest with 3 tblsp of yeast, the hemp seed and the tamari. Mix into the rest of the mixture to create a pretty swirl. Pour 1 cup into each bowl, and garnish with a bit of fresh parsley and a few small pieces of red bell pepper or tomato.
