Hearty Beef Barley Soup
Makes 9 one cup servings perfect for chilly winter days
Since the calorie content is so low I usually pair with a biscuit or corn muffin or double the serving without any guilt

Ingredients

    1 medium diced onion
    4 stalks of diced celery - Keep heads for pot (Optional - I like the added flavor)
    1/2 cup diced carrots
    1 Bay Leaf
    1 can Hunts diced tomatoes
    4 cups water
    4 cups chicken broth
    1 cup uncooked quaker barley
    1 pound beef chuck / fat trimmed
    Salt / Pepper to taste
    1 Bay Leaf

Tips

Can be easily frozen in pre-portioned sizes for thawing and reheating the right serving. Im not sure of shelf life as mine is uaually a staple in this house at winter and only lasts a week


Directions

Turn Slow Cooker on to high setting
Add 4 cups water / can of hunts diced tomatoes with juice
Add 2 cranks of pepper to liquid in slow cooker
Add 4 cranks of sea salt to liquid in slow cooker
Saute16 oz of beef chuck in pan and drain fat from pan
Add 1 Bay Leaf
Dice all vegetables add to liquid in slow cooker
Add celery heads to liquid if desired
Add beef to liquid in slow cooker
Add 1 cup of uncooked barley to soup in slow cooker
Forget it for 2 1/2 hours
Remove celery stalk tops and bay leaf
Serve - Makes 9 one cup servings
