Ingredients

    Bumble Bee Chopped Clams in Clam Juice, 7 oz
    Bumble Bee Tiny Shrimp, 4 oz
    Bumble Bee Fancy White Crabmeat, 4 oz
    Onions, raw, .5 cup, chopped
    Garlic, .25 cup
    Water, tap, 10 cup (8 fl oz)
    Bay Leaf
    Dry Roux 1/4 to 1/2 cup

Tips

Fresh seafood (oysters, shrimp, and crabs) can be substituted. Crawfish can also be added. Some people even put fish (often catfish), but I do not like any fish in the gumbo.

You can also use a traditional oil and flour roux, but the calories and fat contents will be greater.


Directions

Sweat the onions and garlic with 1 tbsp of olive oil. As the vegetables begin to soften, mix in the dry roux. Slowly add 1- 2 cups of water until the roux is dissolved. Add in all of the seafood, seasonings, bay leaves, and remaining water. Bring to a boil, then cook covered over low heat.
