Ingredients

1 tablespoon butter room temp
1/4 cup dry bread crumbs
2 medium boiling potatoes, diced
10 oz. package baby spinach
1 1/2 tablespoon salt
1 cup crumbled feta cheese
2 tablespoons chopped fresh parsley
generous seasoning with black pepper
2 large eggs, beaten
1/4 cup milk
2 tablespoons olive oil
Directions
1. Coat bottom and sides of pie pan with butter, sprinkle bread crumbs on the plate and then rotate to coat until they cover the bottom and sides.
2. Boil potatoes for 10 minutes. Place in a large mixing bowl.
3. Wash spinach and place in colander. Sprinkle with the salt all over and leave for 30 minutes. This causes the juices to "sweat". With your hands, squeeze out all the juices. Cut the leaves roughly and place in bowl with potatoes. Mix in all remaining ingredients.
4. Preheat oven to 375.
5. Place mixture into pie pan. Bake for 40 minutes or until toothpick comes out clean. Let sit for 10 minutes. Enjoy.
